Chai & Salted Pistachio Morning Cake

If you’re a fan of chai tea, chances are that you’ve sat down for a lovely cup of chai and a slice of cake before. But I ask you – have you ever had a chai cake before?

Well now you can with this lovely light vanilla buttermilk cake that is jazzed-up with the addition of chai tea. I love recipes that take something basic like a vanilla cake and add one interesting ingredient which creates something new and exciting. I think Chai Cake is pretty exciting (but as you know, I do get a bit excited over cakes).

Finish your chai cake with a thick vanilla sugar glaze and generous topping of pistachios. I just can’t resist those lovely green nuts!

The recipe calls for a sprinkle of Maldon, Pink Himalyan (or any other light flakey salt) over the pistachios and glaze but including this is up to personal taste.

Serves: 4
For the cake:
  • 1 cup flour
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • 1 tea bag Chai Tea
  • 2 T browned butter
  • ½ cup low fat buttermilk
  • 1 tsp vanilla
  • 1 large egg, room temperature
For the glaze:
  • ½ tsp vanilla
  • ½ cup powdered sugar
  • 1 T milk or cream
For the topping:
  • ¼ cup shelled, roasted pistachios, roughly chopped
  • sprinkle of Maldon, Himalayan Pink {or any other light flaky salt}
