A surprising and lovely flavour combination. The caramelised clementines really lift the almond cake and provide a sweet citrus burst that makes you stop and take notice.

It was heavenly accompanied by a glass of dessert wine after dinner but worked equally well with Earl Grey tea the next day.

Almond Cake with Caramelised Clementines
For the Cake:
  • 1 cup flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 7 oz almond paste (a scant 1 cup)
  • 1¼ c sugar
  • 2½ sticks butter (1/2 lb + 4 Tbsp)
  • 1 tsp vanilla extract
  • 6 eggs
For the Caramelized Clementines:
  • 4 peeled clementines, pulled in half then cut into thin half-moons
  • 2 more clementines, juiced
  • ½ cup sugar
