Apple Pie Cake. Are there three better words ever put together? Or anything as delicious to eat?

I’m a big advocate of baking apple cake over apple pie – it’s just as delicious but quicker and easier to make, so I was extremely happy to come across this recipe for an Apple Pie Cake.

And this recipe is indeed a cross between both an apple pie and an apple cake.

There is a dough but bakes to a consistency that’s more like cake than pie crust. The cake-like dough is made in your mixer and then left to chill for two hours before baking – as with regular pastry. And you do roll out the dough as you would for a normal apple pie pastry crust.

It’s not really an apple pie, but it’s not really an apple cake either. A true hybrid recipe the likes of which I’d never come across before. And we all know how excited I get to see a new cake recipe technique.

While this recipe is easy to make (“easy as pie” as the expression goes), but you do need to chill the dough for two hours before baking, so it’s not what I would describe as quick to make. If you’re looking for something speedier, this easy Apple Cinnamon Cake recipe will do the trick.

Ingredients
For the dough:
  • 110g unsalted butter, at room temperature
  • ½ cup sugar
  • 1 egg
  • ½ tablespoon baking powder
  • pinch of salt
  • juice of ½ lemon
  • 1½ cups plain flour
  •  
For the apples:
  • 4 large green apples
  • juice of ½ lemon
  • 3-4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 generous teaspoon ground cinnamon
