You may have had an Earl Grey Cake before, but meet the Earl’s better half. This is a gorgeous recipe made using the slightly softer more fragrant Lady Grey tea.

Any cake to which you add a rosewater icing is on the feminine side of things, so it seems only fitting that this cake uses Lady Grey not Earl Grey tea.

A sophisticated and elegant cake, it’s the perfect combination of tea and lemon zest in the cake itself. Tea and lemon is an age old flavor pairing. And then there’s that magnificent delicate rosewater icing.

A guilty secret – I sometime (cough cough – often) don’t bother icing my cakes but I would never skip the icing here. It’s utterly delightful.
