I’m always on the look out for fantastic carrot cake recipes (same for banana cake recipes). You can never have too many in my view.

This is a great carrot cake recipe that has pretty much everything you could ask for in a carrot cake – carrot (of course), raisins, coconut, pineapple, nuts (walnut or pecans) and a mix of spices. Add in lashings of fabulous cream cheese frosting and it’s a winner.

Carrot Cake
 
Ingredients
  • 2 cups All Purpose Flour
  • 1½ cup Sugar
  • ¼ cup Brown Sugar, packed (dark or light)
  • 1½ tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 4 tsp Cinnamon
  • ¼ tsp Nutmeg
  • ⅛ tsp Ground Cloves
  • ¼ tsp Ground Ginger
  • 2 cups Finely Grated Peeled Carrot, packed
  • 1 cup Coconut Flakes, sweetened
  • 1 cup Raisins (Optional)
  • 1 can 8 oz Crushed Pineapple, drained (reserve 1 T of drained pineapple juice)
  • 1½ cup Walnuts or Pecans, chopped small pieces
  • 1 cup Vegetable Oil
  • 2 tsp Vanilla Extract
  • 1 Tbls Finely Grated Fresh Orange Peel
  • 3 Eggs, extra large
  • Non stick Cooking Spray

    Hi,I’m allergic to pineapple,is there any substitution or we can just skip it?

    • I’d just skip the pineapple or increase the carrot, coconut, raisins and nuts to make up for the bulk. Another option would be to add dried apricots that you’ve soaked in water instead of the pineapple.
