I’m always on the look out for fantastic carrot cake recipes (same for banana cake recipes). You can never have too many in my view.

This is a great carrot cake recipe that has pretty much everything you could ask for in a carrot cake – carrot (of course), raisins, coconut, pineapple, nuts (walnut or pecans) and a mix of spices. Add in lashings of fabulous cream cheese frosting and it’s a winner.

Hi,I’m allergic to pineapple,is there any substitution or we can just skip it?

    • I’d just skip the pineapple or increase the carrot, coconut, raisins and nuts to make up for the bulk. Another option would be to add dried apricots that you’ve soaked in water instead of the pineapple. Carrot cake is pretty forgiving and there are many variations – or you can go back to basics with this “Just Carrot Carrot Cake” – Hope that helps!
