This is a great recipe that pushes the boundaries of just how many dried fruits and nuts you can squeeze into one delicious and nutritious cake.

Absolutely bursting with flavour thanks to apricots, figs, dates, cranberries, pecans and walnuts. And very easy to make too.

This recipe pleases those with a sweet tooth, as well as those with more savory palettes – making it just perfect for gifts. Make as smaller loaves, pop in a cellophane gift bag with a bow and you’re done (and much better than giving a freaky garden gnome with dead eyes like the one in the photo).

Ingredients
  • ½ cup unbleached white flour
  • ¼ cup whole wheat flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup slightly packed light brown sugar
  • ½ tsp cardamom
  • ½ tsp cinnamon
  • ¼ tsp cayenne
  • 1½ cups dates - quartered
  • ¾ cup golden figs - diced large
  • ⅔ c. dried cranberries
  • ⅔ c. dried apricots - diced large
  • 1¾ walnut halves
  • 1½ cups pecans
  • ¼ cup pine nuts
  • 2 tsp vanilla
  • 3 large eggs
