The roasted hazelnuts give such a lovely depth of flavour with the lemon zest and juice providing just a little tang.
While delicious all by itself, or accompanied with yogurt and strawberries as in the picture, I always think that hazelnuts and chocolate are a fantastic combination. If you do want to jazz up this Hazelnut Cake, try a dark chocolate ganache or perhaps some good quality dark chocolate chips in the cake batter.

- 8 large eggs, separated
- ¾ cup sugar
- grated zest and juice of one lemon
