An easy to make Eggless Chocolate Cake recipe that tastes as good as it looks.

A vegan chocolate cake recipe as well, there’s a good chocolatey richness to this cake thanks to the use of coffee and vinegar. You can’t taste either the coffee or vinegar in the finished cake but both add a superb depth of flavour to a chocolate cake that cocoa powder and hot water alone can’t match.

As you would expect from a vegan chocolate cake, there’s no butter in the recipe. The moistness comes from oil. One reason that I love this Eggless Chocolate Cake recipe is that it’s so incredibly easy to make – you don’t even need an electric mixer. You just mix wet and dry ingredients separately and then combine.

The basic recipe is for a plain chocolate cake but you can add in extra goodies like walnuts and chocolate chips if you like.

  • 3 cups all-purpose flour
  • 2 cups sugar
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups hot water
  • ¾ cup vegetable oil
  • 2 tablespoons distilled white vinegar
  • 1 tablespoon instant coffee granules
  • 1 tablespoon vanilla extract
